Les paraules "pollastre pakora" poden fer que salivi a l'instant. Cruixent per fora, sucós a l'interior, espècies subtils que colpeixen les papil·les gustatives amb la intensitat adequada i submergides en salsa de tomàquet, maionesa o chutney de menta: les pakoras de pollastre són petites butxaques d'alegria que us esclaten a la boca com un confeti. Sovint, quan tinc convidats que vénen o necessito menjar amb una tassa de cafè o te calent un dia de pluja, faig pakora de pollastre. Tot i això, m’avorreixo de fer la mateixa recepta una i altra vegada. Per tant, intento diferents mètodes de cocció i experimento amb diferents ingredients, menjars i arrebossats per crear una pakora de pollastre diferent cada vegada. Algunes receptes han fallat, però algunes han resultat guanyadores (guiño!). I res no em fa més feliç que compartir amb vosaltres aquestes receptes de pakora de pollastre. Així doncs, sense demora, anem a cuinar!
1. Clàssic Chicken Pakora

Ingredients
- 500 daus de pollastre desossat
- ½ tassa de ceba tallada fina
- 2 cullerades de suc de llimona
- 1 culleradeta de pasta de gingebre
- 1 culleradeta de pasta d’all
- ½ culleradeta de xili en pols
- ½ culleradeta de garam masala
- ¼ culleradeta de cúrcuma en pols
- ½ culleradeta de coriandre en pols
- 3-4 cullerades de farina de cigrons o besan
- 1 culleradeta de farina de blat de moro
- 1 culleradeta de xili verd picat
- Sal al gust
- Oli per fregir
Com es prepara
- Barregeu la ceba, el suc de llimona, la pasta de gingebre, la pasta d’all, el bitxo en pols, la cúrcuma, el garam masala, el coriandre, el bitxo verd i la sal en un bol.
- Deixeu caure els daus de pollastre i barregeu-ho bé. Mantingueu-lo a part durant 10 minuts.
- Ara, afegiu el besan i la farina de blat de moro al bol que conté els daus de pollastre i barregeu-ho bé.
- Escalfeu l'oli en una paella i fregiu els daus de pollastre fins que quedin rossos.
- Serviu-ho calent amb salsa de tomàquet o xutney de menta.
2. Pakora de pollastre amb fulles de curri

Ingredients
- 500 daus de pollastre desossat
- 1 ou
- 1 culleradeta de coriandre en pols
- ½ culleradeta de xili en pols
- ¼ culleradeta de cúrcuma
- 12 -15 fulles de curri
- 1 culleradeta de pasta de gingebre
- 1 culleradeta de pasta d’all
- 1 culleradeta de pasta de cacauet
- 4 cullerades de gram de farina o besan
- 1 culleradeta de farina de blat de moro
- 4 xilets escletxats
- Sal al gust
- Oli per fregir
Com es prepara
- Afegiu en un bol l’ou, el coriandre en pols, el pols de xili, la cúrcuma, les fulles de curri, la pasta de gingebre i all, la pasta de cacauet i la sal.
- Tireu els daus de pollastre al bol i barregeu-los bé. Mantingueu-lo a part durant 10 minuts.
- Afegiu el besan i la farina de blat de moro al bol i barregeu-ho bé.
- Escalfeu l'oli en una paella i fregiu els daus de pollastre fins que es tornin rossos.
3. Punjabi Chicken Pakora

Ingredients
- 500 gr de pollastre desossat
- 1 ou
- 2 cullerades de pasta d'all gingebre
- 5 cullerades de iogurt
- 5-6 cullerades de gram de farina o besanada
- 2 cullerades de farina per a tots els usos
- 2 cullerades de xili verd picat
- 1 cullerada de pols de coriandre
- 1 cullerada de comí en pols
- 1 cullerada de kasuri methi
- 2 cullerades de ghee
- 1 culleradeta de mango sec en pols
- Sal al gust
- Oli per fregir
Com es prepara
- Afegiu mató, pasta de gingebre-all, comí, coriandre i xili en pols, xili picat, cúrcuma, sal, ghee, kasuri methi i sal a un bol i barregeu-ho bé.
- Drop the chicken pieces and mix well. Set it aside for 20 minutes.
- Now, add the gram flour and all-purpose flour to the bowl and mix.
- Heat the oil in a pan and fry the chicken until it turns golden brown.
- Sprinkle dried mango powder before serving hot with mint chutney.
4. Crispy Moong Chicken Pakora

Ingredients
- 300 gm boneless chicken cubes
- 4-5 tablespoons soaked moong daal
- 1 tablespoon all-purpose flour
- 3 tablespoons gram flour
- 1 tablespoon garlic paste
- 1 tablespoon grated ginger
- ½ cup thinly sliced onions
- 1 teaspoon coriander powder
- ½ teaspoon chili flakes
- ¼ teaspoon turmeric powder
- 3 teaspoons ginger paste
- 2 teaspoons green chili paste
- 1 small bowl of tamarind extract
- Salt to taste
- 1 teaspoon rice bran oil
- Oil for deep frying
How To Prepare
- Blend the soaked moong dal. Add water if required to make it into a fine paste. Add a little salt to it and mix.
- Add all-purpose flour, gram flour, ginger and garlic paste, onions, coriander powder, chili flakes, turmeric powder, and salt to a bowl and mix well. Keep it aside for 15 minutes.
- In the meanwhile, prepare the dip by heating a pan and adding a teaspoon of rice bran oil to it. Add ginger and fry for 20 seconds. Add green chili paste, salt, and tamarind extract. Cook for 2 minutes. Remove from the flame and keep it aside.
- Heat oil in a pan for deep frying.
- Take the chicken pieces one at a time, dip them into the moong paste and drop them into the oil.
- Fry until they turn golden brown.
- Serve hot with tamarind chutney.
5. Andhra Style Chicken Pakora

Ingredients
- 500 gm boneless chicken cubes
- ½ cup chopped onion
- 2 teaspoons green chilies
- 3 tablespoons lemon Juice
- ½ teaspoon chili powder
- ½ teaspoon turmeric powder
- 1 tablespoon dried coconut powder
- 1 tablespoon peanut powder
- 2 teaspoons ginger and garlic paste
- 3 tablespoons gram Flour
- 1 tablespoon rice flour
- Chopped green chili
- A few curry leaves for garnish
- Oil for deep frying
- Salt
How To Prepare
- Add chicken cubes, ginger-garlic paste, chili powder, green chili, turmeric, peanut powder, dried coconut powder, lemon juice, chopped onion, salt, and a little water to a bowl. Mix well and keep it aside for 15 minutes.
- Heat the oil in a pan.
- Add gram flour to the bowl containing chicken and mix well.
- Take one chicken piece at a time, put it in the bowl containing rice flour, coat well and drop it in the pan for frying.
- Fry until golden brown.
- Garnish with curry leaves and serve hot.
6. Chinese Chicken Pakora

Ingredients
- 300 gm boneless chicken cubes
- ½ cup chopped scallions
- 2 teaspoons sesame seeds
- 1 tablespoon fish sauce
- 1 tablespoon Worcestershire sauce
- 2 teaspoons minced garlic
- 1 teaspoon grated ginger
- 1 tablespoon organic honey
- 1 teaspoon chili flakes
- 2 tablespoons all-purpose flour
- 2 teaspoons corn flour
- Oil for deep frying
- Salt to taste
How To Prepare
- Toss the chicken cubes, white portions of the scallions, sesame seeds, fish sauce, Worcestershire sauce, minced garlic, grated ginger, organic honey, chili flakes, and salt in a bowl. Add a little water if required. Mix well and keep it aside for 15 minutes.
- Mix all-purpose flour, corn flour, and a little salt in a plate.
- Heat oil in a pan.
- Take one chicken cube at a time and put it in the flour mix, coat well, and drop it into the hot oil. Fry until the pieces turn golden brown.
- Garnish with sesame seeds and the green portion of the scallions.
7. Hawaiian Chicken Pakora

Ingredients
- 500 gm boneless chicken cubes
- ½ cup pineapple juice
- 1 teaspoon brown sugar
- 2 tablespoons chopped pineapple
- 4 tablespoons Worcestershire sauce
- 2 tablespoons lime juice
- 2 tablespoons low-sodium soy sauce
- 1 teaspoon minced garlic
- 1 teaspoon grated ginger
- 2 tablespoons ketchup
- A handful of coriander leaves
- 1 teaspoon black pepper powder
- Oil for frying
- Salt to taste
How To Prepare
- Combine chicken cubes, pineapple juice, brown sugar, Worcestershire sauce, lime juice, low-sodium soy sauce, minced garlic, grated ginger, ketchup, black pepper, and salt. Keep it aside for 15 minutes.
- Heat oil in a pan and shallow fry the chicken cubes until they become soft inside and caramelized outside.
- Garnish with chopped pineapple and coriander leaves.
8. Honey Mustard Chicken Pakora

- 500 gm boneless chicken cubes
- 1 teaspoon freshly made mustard paste
- 1 tablespoon honey
- 1 egg
- ½ cup chopped onion
- 2 tablespoons lime juice
- ½ teaspoon chili powder
- ¼ teaspoon turmeric powder
- 1 teaspoon corn flour
- 3 tablespoons all-purpose flour
- ½ teaspoon black pepper
- 1 teaspoon dried thyme
- 3 tablespoons yogurt
- 3 tablespoons mayonnaise
- ½ teaspoon smoked paprika
- Salt to taste
- Oil for deep frying
How to Prepare
- Combine chicken cubes, mustard paste, honey, lime juice, egg, onion, chili powder, turmeric powder, and salt in a bowl. Keep it aside for 15 minutes.
- In a different bowl, mix corn flour, all-purpose flour, salt, dried thyme, and black pepper.
- Heat a pan and add oil.
- In another bowl, prepare the dip by mixing yogurt, mayonnaise, smoked paprika, and a little salt.
- Take one piece of chicken at a time and dip it into the bowl containing the flour mix. Coat the chicken pieces with the flour mixture and drop them into the oil.
- Fry until they turn golden brown.
- Serve hot with the dip.
9. Minced Chicken Pakora

Ingredients
- 500 gm minced chicken
- 1 ½ teaspoons garam masala
- ½ teaspoon chili powder
- ½ teaspoon turmeric powder
- 2 tablespoons lime juice
- ½ cup chopped onion
- 1 teaspoon ginger paste
- 1 teaspoon garlic paste
- ¼ cup chopped parsley
- 1 egg
- 1 ½ teaspoons coriander powder
- 1 teaspoon cumin powder
- 1 tablespoon ghee
- 2 tablespoons rice flour
- 3 tablespoons all-purpose flour
- Salt to taste
- A handful of coriander leaves
- Oil for shallow frying
How To Prepare
- Combine the minced chicken with ghee, garam masala, egg, chili powder, cumin and coriander powders, turmeric, lime juice, onion, parsley, ginger and garlic paste, and salt.
- Take a tablespoon of the minced chicken mix and roll it into a round shape using your palms. Press down to form a chicken patty.
- Do the same with the rest of the minced chicken mix.
- In a plate, mix the rice flour, all-purpose flour, and salt.
- Pick up the chicken patties, coat them with the flour mix and refrigerate for 30 minutes.
- Heat oil in a pan and shallow fry the chicken patties until they turn golden brown.
- Garnish with coriander leaves and serve hot with ketchup.
10. Spicy Chicken Pakora

Ingredients
- 500 gm boneless chicken cubes
- 1 teaspoon ginger paste
- 1 teaspoon garlic paste
- 2 tablespoons onion powder or paste
- 2 teaspoons green chili paste
- 2 teaspoons vinegar
- 2 tablespoons minced coriander leaves
- ½ teaspoon chili powder
- 1 teaspoon all-purpose flour
- ½ teaspoon chaat masala
- Salt to taste
- Oil for deep frying
How To Prepare
- Combine the chicken cubes, ginger and garlic paste, onion powder, green chili paste, chili powder, minced coriander leaves, chaat masala, vinegar, and salt in a bowl. Add a little water if required.
- Keep it aside for 15 minutes.
- Add the all-purpose flour to the bowl of chicken and mix well.
- Heat oil in a pan and fry the chicken cubes until they turn golden brown.
- Serve hot with mint chutney.
11. Vegetable Chicken Pakora

- Combine the chicken, chopped veggies, ginger and garlic paste, gram flour, all-purpose flour, salt, chili, and dried mango powder.

- Heat oil in a pan and fry the chicken until it turns golden brown.
- Serve hot with ketchup.
12. Tandoori Chicken Pakora

- 500 gm boneless chicken strips
- ½ cup curd
- 2 tablespoons mustard oil
- ½ teaspoon Kashmiri chili powder
- ¼ teaspoon chili powder
- ½ teaspoon garam masala
- ½ teaspoon chaat masala
- 1 tablespoon tandoori masala
- 1 teaspoon ginger paste
- 1 teaspoon garlic paste
- Salt to taste
- A handful of coriander leaves
- Oil to grease the tandoor grill
How To Prepare
- Combine the chicken cubes, curd, tandoori masala, garam masala, chaat masala, Kashmiri chili powder, chili powder, ginger and garlic paste, mustard oil, and salt. Keep it aside for 20 minutes.
- Grease the griller and char the chicken strips.
- Garnish with coriander leaves.
- Serve hot with mint chutney.
13. Achari Chicken Pakora

Ingredients
- 500 gm boneless chicken cubes
- 1 teaspoon mustard seeds
- 1 teaspoon fennel seeds
- ½ teaspoon fenugreek seeds
- ½ cup yogurt
- 2 tablespoons ginger-garlic paste
- 2 tablespoon onion powder or paste
- 1 ½ teaspoons coriander seeds
- 1 teaspoon chili flakes
- ½ teaspoon turmeric
- 2 tablespoons lemon juice
- Coriander leaves for garnish
- Salt to taste
- Oil to shallow fry
How To Prepare
- Dry roast the mustard seeds, coriander seeds, fenugreek seeds, and fennel seeds. Use a grinder to grind them into a fine powder.
- Combine this powder with curd, ginger-garlic paste, chicken cubes, lemon juice, chili flakes, onion powder, turmeric, and salt. Keep it aside for 20 minutes.
- Heat the oil in a pan and shallow fry the chicken until it is cooked well.
- Garnish with coriander leaves.

15. Mexican Style Chicken Pakora

- 500 gm minced chicken
- ½ cup mashed avocado
- ¼ cup finely chopped onion
- 5 pickled jalapenos, chopped
- ¼ cup chopped cilantro
- 3 tablespoons lemon juice
- ¼ cup yogurt
- 1 teaspoon chili flakes
- 1 egg
- 2 tablespoons all-purpose flour
- Salt to taste
- ½ cup taco shell crumbs
- Oil to shallow fry
How To Prepare
- Combine the minced chicken with mashed avocado, chopped onion, chopped pickled jalapenos, cilantro, chili flakes, yogurt, and salt.
- Take a tablespoon of this minced chicken and use your palms to make medium-sized balls.
- Whisk the egg in a bowl.
- Carefully coat the chicken balls with flour, then dip them into the whisked egg, and then coat them with taco shell crumbs.
- Refrigerate for 20 minutes.
- Deep fry them until they are golden brown.
- Add a dash of lemon and enjoy!
